INGREDIENTS
- 4 apricots
- 80g rocket
- 100g feta
- 1/2 radicchio, thinly sliced
- sprig of fresh tarragon, stalk removed
- 3 thick cut slices of bread, cut into cubes
- olive oil
DRESSING
- 1 banana shallot, finely chopped
- 2 tablespoon red wine vinegar
- 3 tablespoons extra virgin olive oil
- 2 teaspoons honey
- salt & black pepper
METHOD
- To make the dressing, add the olive oil, vinegar and honey to a bowl and whisk together. Add the shallot, season with salt and pepper; stir to combine.
- Cut the apricots in half, remove the stone and cut each half into thirds.
- Heat some olive oil in a pan over medium heat, add the cubes of bread and toast until they become crispy
- To a large bowl or serving platter, add the rocket, radicchio and apricots. Crumble the feta on top then add the tarragon and toasted croutons.
- Pour the dressing on top and toss everything together. Finish with some flaky sea salt and fresh cracked pepper. Enjoy!
