Apricot, Feta & Radicchio Salad


This rather beautiful looking salad is packed with antioxidants such as beta-carotene and anthocyanins, working to combat oxidative stress in the body. Both nutrients are particularly beneficial for the health of your skin, protecting it from UV damage, making this the perfect summer salad! Eating a variety of different coloured fruits and veggies ensures you’re getting a broad spectrum of phytonutrients (plant chemicals), each with unique properties that are essential for the maintenance of optimal health.


prep time: 10 minutes   serves: 2


INGREDIENTS

  • 4 apricots
  • 80g rocket
  • 100g feta
  • 1/2 radicchio, thinly sliced
  • sprig of fresh tarragon, stalk removed
  • 3 thick cut slices of bread, cut into cubes
  • olive oil

DRESSING

  • 1 banana shallot, finely chopped
  • 2 tablespoon red wine vinegar
  • 3 tablespoons extra virgin olive oil
  • 2 teaspoons honey
  • salt & black pepper

METHOD

  1. To make the dressing, add the olive oil, vinegar and honey to a bowl and whisk together. Add the shallot, season with salt and pepper; stir to combine.
  2. Cut the apricots in half, remove the stone and cut each half into thirds.
  3. Heat some olive oil in a pan over medium heat, add the cubes of bread and toast until they become crispy
  4. To a large bowl or serving platter, add the rocket, radicchio and apricots. Crumble the feta on top then add the tarragon and toasted croutons.
  5. Pour the dressing on top and toss everything together. Finish with some flaky sea salt and fresh cracked pepper. Enjoy!
